Hope some of you knows how looks this food and for those who have no idea, let me explain you. Yufka is a thin, round, and unleavened flatbread in Turkish cuisine but we also have it in our Macedonian cuisine. This is something similar to pasta, macaroni, and spaghetti but is tastier. It is similar to lavash ( if it helps you to understand) and about 18 inches (40–50 cm) in diameter. It is usually made from flour, eggs, and milk. The amount depends on how many peels (flat and thin discs of dough that are used for the further preparation of jufki) are needed (a family makes an average of 30-60 peels which are then cut into strips or broken into lengthened pieces). For example, for 10 peels you will need 7 eggs, 1 kg flour and 20 spoons milk. The next steps, after the mix is finished, the dough is divided into smaller pieces (it is shaped into smaller balls), it means that you can start with the shaping of the flat discs.

Once finished, each dough sheet is left exposed to the sun to dry. Whether through the weather is hot they dry the peels outdoors and it dries for even one day. But, if there is rain, people dry it indoors and leave it dry for two days. The pieces are covered with a thin sheet to protect them from insects. Some housewives prefer to dry the pasta on a clean clothes dryer, but underneath, they put clean white sheets because the dough pieces slip and fall to the ground.
